This bread is made by hand-twisting each piece of dough, inspired by the legendary Gordian knot that cannot be untied. 
Without a formal framework, the knot is tied only with the sense of the hand, and then baked as is, completing a living form like a single piece. 
This bread, which started from the phrase ‘Gordian knot’ in the lyrics of a song, began as an attempt to unravel the symbolism in language into actual dough. Just as complexly intertwined lines eventually solidify into one shape, I tried to capture the knots of emotion and time in the dough.
